Lacy Smith named Miss Arkansas Rice

Lacy Smith of Ward, Miss Lonoke County Rice, was named 2018-19 Miss Arkansas Rice on Saturday at the Embassy Suites in Little Rock. Smith, 18,  is the daughter of Joel and Lana Smith.
Emma Ferren of Searcy (White County) was first runner-up. Second runner-up was Sydney Dumond of Dewitt (Arkansas County). Other county winners participating in the state finals were Katie McCorkle (Jackson County), and Chloe Thornhill of Wynne (Cross County).


The goal of the Miss Arkansas Rice program is to encourage interest in rice promotion and to publicize the importance of the Arkansas rice industry to the state’s economy. Contestants were judged on their promotion activities and knowledge of the rice industry. They also cooked a rice dish at the competition on which they were judged. Smith’s recipe was “Mexican Bean and Rice Salad.”


The Arkansas Rice Council sponsors the annual contest in cooperation with Arkansas Farm Bureau and the Arkansas Cooperative Extension Service.
Lacy Smith’s Mexican Bean and Rice Salad
I cup of uncooked brown rice
I (16 ounce)jar of your favorite salsa*
1 (15 ounce) can of kidney beans, rinsed and drained
1 (15 ounce) can of black beans, rinsed and drained
1 (15 ounce) can of whole kemel com, rinsed and drained

salt to taste

* I used Arkansalsa, a salsa made from organic Arkansas-grown ingredients.


1. Cook the rice as directed on the package.
2. In a large bowl, combine the brown rice, salsa, kidney beans, black beans, and corn. Lightly toss all ingredients to mix well, and sprinkle with salt to taste.
3. Refrigerate salad for 1 hour, toss again, and serve.
